I am assuming you are talking about internal Notes mail, try this:

In the Name and Address book open the user (or group) document that you
don't want people to send e-mail to.
Once in the document do File -- Document Properties and click on the key
tab (security).
Rather than have the box checked that reads "All readers and above" go in
the list below it and check off the Domino server name, Local Domain
Servers, and add any other Administrators and/or Admin groups. IMPORTANT:
If you don't give the servers or administrators ability to read this
document then you will not be able to delete either if needed, and the
server may start getting errors in the Log.nsf file because it will not be
able to see the document.

This will keep the name from appearing if someone looks in the address
book. They can still key in the name and send a message that way. This
way if there are some people who should be able to e-mail this person they
still can. Also make sure the name is not listed in any groups.

Hope this helps,

(This is one of those 'boss' questions that make Dilbert so popular...)
Is there any way to prevent a user emailing a particular entry in the
Public Name and Address book?
