The index doesn't seem to be finding stuff in the text itself - just the
subject line.

In your database properties the option to update index, count un-indexed
documents and the index size will be available when the index is finished
running.  Please be aware that the index will grow and grow and will soon
become
larger than the database it is indexing (at least in 4.6)  I regularly
delete
and re-create the indexes to try and control the sizes.
