Rob, try going into Tools > Preferences and changing the mail file owner.

You would want to try this first, but programmatically there is a field in 
each mail database's calendarprofile that is:

name    "Owner"
type    Text
class   Text
flags   Summary Names
length  30
value   "CN=Chris Whisonant/O=COMPORIUM"

I would think that this should take care of that for everyone. You could 
script something to change everything to the right of the "O=" to be PVC 
instead of DEKKO...

Well, as part of the divestiture, I created these people on their new 
server, in their new domain.  As part of the registration process it 
created new mail files.  Then here's where I started to muddy the 
waters. 
I deleted these new files.  Then I replicated over their email files 
from 
the old server / old domain.  So, now when they send email it says
Laurie Haas/DEKKO
sent by Laurie Haas/PVC
And I think that is part of the confusion.  Where do I change the 
properties of the email file from Laurie Haas/DEKKO to Laurie Haas/PVC?

I believe this is defined by your Global Domain doc.

Basic Tab for Global Domain Name if SMTP is in the same domain of the 
mail 

servers
Then under Conversions you put in your pvccomputers.com for Local 
primary 
Internet domain

Old Domain = DEKKO
New Domain = PVC
Old person address:  Harriet Fansler/DEKKO
Old email address:  harriet@xxxxxxxxx
New person address Harriet Fansler/PVC
New email address:  harriet@xxxxxxxxxxxxxxxxxx

What I get as an email address if I click on Reply to:
Harriet_Fansler/DEKKO.PVC@xxxxxxxxxxxxxxxxxx
In case the list mail screws it up it is
Harriet underscore Fansler slash DEKKO dot PVC at pvccompounders.com
