Did you try changing all three of these options?

On CHGSMTPA we have the CCSID 00819 defined for the
charachter code conversion EBCDIC->ASCII.
Since in Italy we have some lower case letters such as
à,è,é,ò,ì,ù that are not mapped on ISO 8 bit
charachter set 8859 to which CCSID 00819 points, I
have tried to use a conversion table copied and
customised from QSYS/QASCII and also I have tried to
change the CCSID to 00850 (Italian code page) but I
still get a parentesys while sending messages that
contains à (A lower case plus ').

Any Idea ?
