I figure it out. I override the AS/400 userid and AS/400 system name by adding my AS/400 profile to "system or personal alias table".
See Below from V4R3M0:
 
 
                             Configure TCP/IP SMTP       
                                                         
 Select one of the following:                            
                                                         
      1. Work with system alias table                    
      2. Work with personal alias table                  
      3. Change SMTP attributes                          
                                                         
   SNADS related options:                                
     10. Work with directory entries                     
     11. Work with distribution queue for SMTP           
     12. Configure distribution services

I'm on OS400 V4R3M0 current CUMM
 
When I send messages, the recipient sees my email address as my USERID,  a period, my AS/400 system name, the @ sign and the IP name defined in the HOST TABLE. e.g baltro.hal@as400.sys.com
 
My need is how do I override the email address to say baltimore.trout@sys.com.  Baltimore is first name, Trout is last name and SYS.COM is a valid internet DOMAIN.
