All the major linux vendors sell just such a product.  When you buy from 
them it includes paid support.  Or you can just download their product for 
free (but that doesn't include paid support obviously).
If I were you, I would get some small PC that you have laying around doing 
nothing and put linux on it and get familiar with it.  It isn't hard to 
install or admin, much easier than most systems imo.
The major hurdle on this deal, is that I will NOT be
on site for any problems. The customer is in NYC and I
need this to be "bullet proof" or "idiot proof" depending
on your perspective.
This is one reason why a linux solution is so nice.  You can use ssh from 
anywhere in the world to securely log in and do whatever work you may need 
(not that you will need to).  Remote administration is one of linux's 
strongest points.
You can also use the linux101 list to ask questions about linux.  Or jump 
on the midrangedotcom AIM chat room and ask questions there.  There are 
usually at least two of us midrangers on there.
