As for minimal, I do a custom setup, then I do this

-- Required Programs - have to have
-- Optional Components - keep only the user's guide
-- iSeries Navigator - must have but uncheck all stuff within, even Basic 
Operations
-- Data Acess - select only the driver(s) you want
-- AFP Workbench Viewer - don't need
-- Toolbox for Java - must have
-- Omit all the rest on the list

The link above will show you how to get an install that has your responses to 
the setup, and that can go on a CD.
