Yep, that's the same way I've been doing it for years. Played around with different background colors in the past, but black just seems right. For the foreground colors I am currently using Green, Turquoise, White, Yellow, and Orange.
To make it easy to differentiate each window when minimized to the task bar or piled up behind others, I also changed the Icon under Edit -> Preferences -> Appearance -> Window Setup. I made custom icons of just the first letter of the client or system (the logos became unrecognizable) and then colored them the same as the foreground color for that session.

  We have multiple systems and use iSeries Access Personal Communications
  emulator.
  What we do to differentiate between the systems is click on:
  Edit-->Preferences-->Appearance-->Color Mapping
  and change the Foreground color to some convention we've agreed upon.
  Then when I'm in my colleague's office helping him out with something I know
  what box we're on for sure and don't have to waste my time on a PICNIC
  (Problem In Chair Not In Computer).

  Subject: Client Access colors
  Does anyone have a color scheme that makes it obvious it's not the default
  color scheme? I've got three systems to connect to, including a new one
  that is the production box, and I need to use a color scheme that "stands
  out" (but that does not spear the eyes, either). I'm thinking maybe a white
  background. FWIW, I'm using iSeries Access for Windows V5R3M0 on WinXP SP2.
  Here's what I now have in my Prod.ws file:
  [Colors]
  ExtendedColorBlue=B3C0F7 6F006B
  ExtendedColorGreen=8DF38B 6F006B
  ExtendedColorPink=FF7DFF 6F006B
  ExtendedColorRed=F56D6D 6F006B
  ExtendedColorTurquoise=58F0F0 6F006B
  ExtendedColorWhite=FFFFFF 6F006B
  ExtendedColorYellow=FFFF00 6F006B
  OIAColorBackground=6F006B
  OtherScreenColor=6F006B
  If you have a scheme that seems to fit what I'm looking for, could I ask you
  to send the contents of the aboive section from your .ws file?
  TIA,
  Dan
