They've got to be fresh and into the boiler within hours of being harvested.
They don't refrigerate as well as shrimp.

Crawfish season is in full swing down here. There are rice farmers who
alternate their crops between rice and crawfish. The fields are flooded for
both crops, but they set out traps for the crawfish.

The sickest I ever got was from a bad piece of fish at a restaurant down the
street from the HQ of Gorton's of Gloucester. Almost went to the hospital.
