Paul has provided you with some great links, and now you must read the books and understand what you are doing. Upgrades are all about planning, if you do the planning up front, they are easy and will be done right. If you expect a magic wand, you are going to be *SCREWED.

How long depends on many variables.
If need to limit your down window, consider building a combined V7R3 OS / PTF image.

I just finished the entire process, multiple LPARS.
