We used that process (copy disk unit data) at least 100 times (even on old 9406 boxes with local SCSI disks) and it also works for SAN environments.
So the claim "it's only a fancy idea of some lab guys" is not that correct.

There are other SAN based methods, but to go without downtime is more a task for SVC based storage or if you are lucky having a mirrored load source...
