While you are right that they physical disks on the host will spread data accordingly it does still help, performance wise, to have multiple virtual disks (WRKNWSSTG) to the guests. And sometimes even additional controllers (WRKNWSD) to the guests. Others here can speak to the technical details as to why. I think it has something to do with the query analyzer or some such thing tuning your queries based on perceived multiple arms or some such thing.

I started out doing one big chunk but rebalanced long ago when I did a system migration.
