In case anyone else is interested, I never did find an answer to my original
question - but I have found a solution to my problem.

There's a package distribution called XAMPP from Apache Friends which
bundles Apache, PHP, mySQL and a bunch of other tools and utilities.  I
downloaded it and installed it in place of my existing PHP and Apache
install and it works perfectly.  There is a similar package for Linux too,
so I'll be using that shortly when my Linux box is up an running.
