I couldn't help but notice that the guest operating systems are limited to
various Windows flavours and OS/2.

Does this mean that it's not possible to run for instance (K)ubuntu in MS
Virtual PC, or that it's not supported?

Has anyone tried this?

MS Virtual PC is free and so is the Virtual Server which is meant to run a
server environment.
