One more thing. Pay attention about the restrictions a Server Core has.

Make sure that your Anti-Virus vendor, Backup vendor, System
Monitoring vendor, Systems Management vendor all support running on
Server Core.

We're running McAfee Enterprise / BackupExec 12.5 / SCOM 2007 / SCCM
2007 and those work very well, however not all vendors do support it.
