Personally, I think the versions are pretty straight forward. You can
discount Windows 7 Starter edition as that's only available with the
purchase of a new machine. That only leaves 3 flavors left: Home
Premium, Professional, and Ultimate. Then choose either 32 or 64bit.
The Mac should be able to run 64bit.
You choice of flavor is simple - If you need the virtual machine to have
the ability to join a domain, then you'll need at least Win 7 Pro. If
not, you could get by with Home Premium.
Another trick for getting it even cheaper is to buy the OEM version, or
System Builder pack.

choices - there Pro was an easy choice - but there are so many options
