And that is _exactly_ what I use the stamps for Rob and have done so for more that 10 years - except it only used to be in the Acrobat product not the reader.

That's not what I want.

Let's say there's something in the pdf that says:
Name: ________________________________________
Address: _____________________________________

And instead of printing it out, writing it in, scanning it back in, and
sending it on, you just want to enter in those sections. I used to use
"sign" to type in the data.
Does that explain it better?

Under Tools - you can select Stamps.

Included in Stamps is the “Sign Here” set and that’s where your signature
goes.

Sadly when the DC update occurred there was no warning that my custom
signatures were going to disappear so now I have to redo them.

I have to admit though that there seems to be a lot more functionality in
this version - time will tell.

Older versions of Adobe Acrobat Reader used to allow me to "sign"
documents. This was useful in filling out forms that weren't really
designed as a fill in form but were actually meant to be printed.
How do I do that in their DC version?
