Perhaps, like you, I thought I'd have noticed this directive after all this time. It may prove to be quite useful if I could get it to work.
Listing the Apache modules indicates that "mod_log_forensic.c" is indeed compiled into Apache. I found only scant info that leads to a specific example on IBM i5 or anywhere for that matter.

Since it uses a pipe feature that is also available for use with the CustomLog directive then I thought I'd try that as well but to no avail as yet.

I'm hoping someone might venture to play around with this like me.

No, I've never tried that. Do you know for certain that the mod_log_forensic Apache module is included with the IBM HTTP server for i?

I thought mod_log_forensic was an extension that, if I wanted it, I'd need to port over to IBM i myself and install. But, I'm not really sure why I think that... I guess it's just what I've always thought :-)
