A meeting is just an example.  I mark _everything_ on my calendar as
done when it's done (sort of like it ain't over till it's over <g>).

Example:  I have an appt on my calendar at 10am today that Joe Blow from
Widgets, Inc. is coming to see me.  After Joe has been here, I want to
mark that appt as completed/done.  In 2 weeks if I look back (for
whatever reason) to this day I want to see the Joe was here and we did
have the appt.  A meeting is no different.

Example:  A reminder to check refrigeration units at 2pm daily is no
different.  I want to mark it completed as well.

The cheapest, simplest PIM I have ever used (Sidekick) even had this.
Right click the item, click Done on the pop up menu and voila: The item
now has a line through it, signifying it's done.
