The mark-up files are generated by an app written by our Windows team.

OK, so then I am confused why you are being tasked with this in the first place.

You say you don't have a Windows server... but the input to your
yet-to-be-built process is generated on Windows? So are we talking
about lots of human users, all sitting at their own PCs, each with a
copy of this markup-generating app? And they are all funneling these
documents to... what is currently a centralized Windows machine which
renders them? And that centralized Windows machine is going away?

I guess what I am trying to get at is: It sounds like there is a
working system in place already. What is the motivation behind
changing it? Does it HAVE to change because some part of it will no
longer be available soon? Or is it unreliable? Inefficient? And
apparently, at least SOME part of the existing system has to stay in
place.
