DHCP should not be used for system level object such as printer
definitions.
Workstations, fine but all else should be DNS.

If you assign an address with dhcp with a reservation for that mac
address again yes, add that address to dns.
But if you have a dhcp assigned address without a reservation then the
address can change and if you had created a dns entry that would now be
wrong if/when the address changed. Given that if the device gets the
address and there is never an outage and the device is never turned off
the address may not change.
Or am I missing something completely ?

True, but why not assign the printer a name and set it up in DNS? Easier
and better for changes when the printer inevitably dies.
