It might be some other device being turned on or off at that time of day and it's changing the RF environment enough that you need to get on a different channel. That device may not even be in the 3G frequency band to affect your situation. Even stranger, it could be a multi-path reflection from a door nearby - think about warehouse loading docks.

You need a friend with a spectrum analyser to find out for sure what's happening.
