Well, you can search for >2 DVI connectors, but that won't necessarily help if you have a card with a VGA & DVI mix.
For quad output I'd typically look for a higher-end card. So, in today's market, I'd look at cards with a GB or more of video RAM (256MB per output sounds fine). Then, subset by PCI Express 2.0 as that's the latest slot interface. That still leaves almost 70 matches so subset again by preferred chipset mfr. I went ATI as I like them better than nVidia. Personal preference, really, although the last time I checked ATI cards were generally less power-hungry than nVidia. That gets it under 30 cards & is easy enough to browse via the pics looking for 4 connectors. You could also assume it'll be more expensive & set a price floor of $150 or so, but with the way tech prices fall that could be dangerous.
D-sub (VGA) & DVI combinations generally won't matter. Typically an adapter will be included to make a DVI + VGA card into a dual-DVI card (or possibly dual VGA but VGA is fading out). The only issue is that Newegg doesn't offer search criteria for "total outputs not including TV".
You probably will want to run DVI everywhere. On my Dell 24" UltraSharp LCD I've noticed some issues with display quality under VGA that go away under DVI.

John, how do you find cards like this? You've posted several dual head
cards in the past and I'll be darned if I can figure out how to look at
the Newegg specs to search/find dual head cards.
Having 2 ports isn't all it takes, is it? I thought I saw a card with a
D-sub and a DVI port but you could only hook up one or the other...
