Jon, I realize you are on a Mac, but in Windows 10 I found that changing the Windows default text size (https://support.microsoft.com/en-us/windows/change-the-size-of-text-in-windows-10-1d5830c3-eee3-8eaa-836b-abcc37d99b9a#:~:text=Change%20the%20size%20of%20text%20in%20Windows%2010,larger%2C%20adjust%20the%20slider%20under%20Make%20text%20bigger.) increased the text size in my RSE.
All of the adjunct windows (Tasks, Object Table, etc), in Eclipse were affected. (Which is a good thing.) I would think that the Mac has a similar default font setting?

I dug into the various settings too and can't find anything that appears to be relavent.

which seems to indicate that you have to tweak CSS files in the plug-in's.

I haven't tried it, but you might want to give some of the things posted in the thread a try.
