Look at Zend, MySQL, or SugarCRM - all of them appear to make money.

There are two obvious areas, service/support contracts, and selling "deluxe" versions with additional features.

One of your competitors (while not open-source) has an interesting model - the IDE is free and the server software is free for up to ten users. Beyond ten you pay for additional capacity.
