Once I find a site I like, I try to mimic it. I usually end up modifying the original design somewhat to meet my needs or my limitations as a web developer.
If I want to add more colors, I visit sites like this one to help me expand the color scheme:

There are lots of websites out there similar to the ones above. Take your pick.
Lately, I've been focusing on how to customize themes for websites built with the Drupal content management system. Drupal gives you page templates, which is both a time-saver and a design constraint. Here are two recent examples that have fairly different looks and feels. This is a project I did for a local group:
