As the others have said more memory, a bigger SSD drive, a faster processor, multiple monitors, etc. = better.  You didn't say what your budget, if any, might be.  I knew that I liked versatility but have found that I like portability.  I've recently purchased a Microsoft Surface Go.  This is not, bigger, better, faster but it works, is portable, and versatile.  For you I would suggest looking at the Surface Pro.  The Surface dock would let you "turn it into a desktop" with multiple monitors, external drive(s), and more.  USB-C will also let you add in the external peripherals.  The Surface Pro 6 doesn't have USB-C but there are rumors that the Surface Pro 7 will.  Still the Surface Pro 6 is nice.
I love the portability of my Surface Go.  It's about the size of an iPad, functions as a tablet or a full Windows 10 PC and can fit in a zip-up portfolio.  If you're just using Office, IBM i Access, and web browsers, it may be enough for you.
